Chef Flemming’s Bake Shop

If you want warm bread straight out of the oven or the freshest chocolate éclair, cinnamon roll or cannoli you have ever tasted, then find your way to Chef Flemming’s Bake Shop. This quaint European Style Bakery is Water Street District’s first authentic bake shop, where the crisp bread and tasty pastries are made from scratch every day. The family-owned bakery relies on old-fashioned baking with fresh ingredients and special attention to detail, all while catering to the wishes and desires of its customers.

The bake shop is like a dream come true for Denmark-born Chef Flemming Pedersen, who began his culinary career as a baker apprentice. He graduated from the Danish Baking Laug and immigrated to the United States in 1976 to follow a successful career as both a premier chef at 10 of Las Vegas’ famed hotels and casinos, such as the Flamingo Hotel and Caesar’s Palace, and as an instructor at The International Culinary School at The Art Institute of Las Vegas.

While he was Executive Pastry Chef at the Tropicana Hotel, Chef Flemming developed exquisite showpiece desserts created from sugar and chocolate and innovative recipes that he has brought with him to Water Street. This near four-decade veteran of the baking and pastry industry has tailored the best of his culinary talents to service the downtown Henderson community and anyone looking for a bakery that is abundant in authenticity and pride, offering everything from an extravagant sugar sculpture to a simple, homemade, chocolate chip cookie.

While specializing in special-order celebration cakes, Chef Flemming’s Bake Shop offers cupcakes, chocolate dipped strawberries, cream puffs, lemon tarts, Danishes, muffins, cookies, bread pudding, cheesecake, holiday gift baskets and even sandwiches.

Chef Flemming’s wife, Cheré, and their daughter, Caitlin, both help run the bakery, which is open Monday through Friday from 7:00 a.m. to 5:00 p.m. and Saturdays from 8:00 a.m. to 5:30 p.m.  Their son is Alastair, US Army Medic stationed in Iraq. The proud Pedersen’s are avid supporters of the Blue Star Mothers of Southern Nevada and Families United in honor of their son and the troops. The family has plans to expand the bake shop next year to provide space for cupcake decorating, children’s birthday parties or bridal showers.
